I have to confess that this is one of my favorite blueberry recipes.
I was introduced to this classic recipe when I was a child, and have been making this one for years now.
I have never made a recipe that involves blueberries, so I’ve never been able to replicate the taste and texture of this blueberry cake.
However, one of the ingredients that I have been wanting to try is blueberries.
This blueberry-inspired cake recipe has all of the necessary ingredients you will need to make your own blueberry version.
Ingredients: 1 1/2 cups blueberries 1 cup sugar 1 cup flour 1/4 cup cocoa powder 1/8 teaspoon baking soda 1 cup blueberries ½ cup all-purpose flour 1 cup white granulated sugar 1/3 cup milk 3/4 teaspoon vanilla extract Directions: Preheat oven to 350 degrees F. Mix blueberries with sugar in a medium bowl until well blended.
Add the flour and cocoa powder to the blueberries and mix until well combined.
Add in blueberries one at a time and mix well.
Add milk and vanilla extract to the mixture and mix thoroughly.
Add a few spoonfuls of flour at a go.
Fold in blueberry mixture until combined.
Place a sheet of parchment paper on the bottom of a 9×13 inch baking pan.
Use a pastry brush to smooth out the sides of the pan.
Bake for 15 minutes, or until a toothpick comes out clean.
Remove from oven and cool completely.
Cool in the pan for 30 minutes before removing from pan.
Store in an airtight container in the refrigerator for up to 3 days.
Recipe Notes: You can also make this blueberries cake as is or store it in the fridge.
The blueberries will thicken up a little, but you won’t be able to see the blueberry filling on top.
